1. Coat a non-stick skillet with cooking spray and allow pan to warm on the stove, on medium-low heat. 
  2. Puree banana in blender. 
  3. Using a whisk, combine the pureed banana and remaining ingredients in a bowl. Continue to whisk until uniformly combined. 
  4. Scoop out 1/3 cup of pancake batter onto skillet. 
  5. Cook pancake until batter is covered with bubbles, about 2 minutes, then flip over pancake and allow to cook until batter is cooked through, about another minute. 
  6. Repeat step 5 until all of the pancakes are cooked.
