Bare Life Hot Cocoa Pancakes

I hope you enjoy our delicious hot cocoa pancakes! They make the perfect treat for Sunday brunch or anytime you have a craving for pancakes - which for me is anytime of the day. Breakfast for dinner anyone? 


Little advice, I recommend you double or triple the recipe as in my house these pancakes went quickly. My friends and family didn't believe me when I told them these pancakes were Paleo, Kosher Pareve, gluten free, dairy free, refined sugar free, soy free, corn free, low FODMAP, egg yolk free and xanthan gum free - and yours won't either.

Ingredients:

  • Cooking oil spray 
  • 1 medium puréed banana (about 7” long)* 
  • 9 Tbsp (3 servings) Bare Life Coconut Hot Cocoa 
  • 2 Tbsp liquid egg whites 
  • 1/3 cup quinoa flour 
  • 2 tsp lemon juice 
  • 1 tsp baking powder 
  • 1/2 tsp alcohol-free vanilla extract 
  • 1/8 tsp Himalayan salt

Equipment:

  • Non-stick skillet 
  • Blender 
  • Spatula 
  • Mixing bowl 
  • Measuring cup 
  • Tablespoons 
  • Teaspoons

Instructions:

  1. Coat a non-stick skillet with cooking spray and allow pan to pre-heat on the stove, on low heat to prevent burning.
  2. Puree banana in blender. 
  3. In a mixing bowl, combine the pureed banana. remaining ingredients and any mix-ins you desire. Stir until uniform.
  4. Scoop out 1/3 cup of pancake batter onto skillet. 
  5. Cook first side of the pancake for about 4 minutes until batter has bubbles all the way through. Then, flip the pancake over and allow to cook for about another 2 minutes until batter is cooked through.
  6. Repeat until all pancakes are cooked.**
  7. Serves really well with maple syrup or dark agave, as well as our Coconut Whipped Cream.
  8. Enjoy your creation!

Toppings & Mix-Ins:

  • 3 Tbsp chocolate chips (opt. mix-in)
  • 2 Tbsp shredded coconut (opt. topping)
  • 2 Tbsp chocolate shavings (opt. topping)
  • Sliced banana (opt. topping)
  • Sliced strawberries (opt. topping)

Cooking Tips:

*Be sure to use a ripe banana, about 7" long or the batter will be a bit thick. You can always add in almond milk if the batter is too thick.

***Re-spray skillet between pancakes to prevent sticking 

Prep Time: 5 minutes

Cook Time: 20 minutes


Makes about 4 pancakes
