Bare Life Hot Cocoa Pancakes

This is our first recipe, so I hope you enjoy our delicious hot cocoa pancakes! They make the perfect treat for Sunday brunch or anytime you have a craving for pancakes. Breakfast for dinner anyone? Little advice, I recommend you double or triple the recipe as in my house these pancakes went quickly. Get creative with our Bare Life Coconut Hot Cocoa pancakes that are Paleo, Kosher Pareve, gluten free, dairy free, refined sugar free, soy free, corn free, low FODMAP, egg yolk free and xanthan gum free.

Ingredients:

  • Cooking oil spray 
  • 1 medium puréed banana (about 7” long)* 
  • 1/2 cup Bare Life Coconut Hot Cocoa 
  • 1/3 cup liquid egg whites 
  • 1/3 cup quinoa flour 
  • 1 Tbsp unsweetened almond milk** 
  • 2 tsp lemon juice 
  • 1 tsp baking powder 
  • 1/2 tsp alcohol-free vanilla extract 
  • 1/8 tsp Himalayan salt

Equipment:

  • Non-stick skillet 
  • Blender 
  • Spatula 
  • Mixing Bowl 
  • Whisk 
  • Measuring Cup 
  • Tablespoons 
  • Teaspoons

Instructions:

  1. Coat a non-stick skillet with cooking spray and allow pan to warm on the stove, on medium-low heat. 
  2. Puree banana in blender. Using a whisk, combine the pureed banana and remaining ingredients in a bowl. Continue to whisk until uniformly combined.
  3. Scoop out 1/3 cup of pancake batter onto skillet. 
  4. Cook pancake until batter is covered with bubbles, about 2 minutes, then flip over pancake and allow to cook until batter is cooked through, about another minute. 
  5. Repeat step 4 until all of the pancakes are cooked.***
  6. Enjoy your creation!

Toppings & Mix-Ins:

  • Serve with our coconut whipped cream, drizzled with our chocolate syrup, or maple syrup. 
  • Optionally add in ¼ cup chocolate chips or slices from 2 medium ripe bananas.

Cooking Tips:

*Be sure to use a large ripe banana, about 9”

**You can substitute almond milk with another unsweetened nut milk or even water.

**You can always add in more almond milk if the batter is too thick or omit the almond milk if the batter is too thin.

***Re-spray skillet between pancakes to prevent sticking
