1. Preheat oven to 375°F.
  2. Blend bananas with the lemon juice in a food processor or blender.
  3. Add remaining ingredients to a stand mixer. You can also combine by hand. Stir mixture until uniform, smooth and creamy.
  4. Fold in chocolate chips, if desired.
  5. Add muffin liners to a standard muffin tin,
  6. Scoop about 4 tablespoons of batter into each of the muffin liners. Top with banana slices, if desired.
  7. Bake for 20-25 minutes or until toothpick inserted into the middle comes out clean.
  8. Allow muffins to cool in pan for around 5 minutes before removing.
  9. Enjoy your creation!
