1. Preheat oven to 300 °F.
  2. Lightly spray an unlined mini muffin pan with your favorite cooking spray.
  3. Puree ripe banana and set aside for later.
  4. In a stand mixer, or equivalent, combine the vegan butter, agave nectar, vanilla and peppermint extracts, egg whites, pureed banana and lemon juice. Stir until smooth.
  5. Then add in the Bare Life Coconut Hot Cocoa Mix and the remaining ingredients. Stir this batter until well combined.
  6. Then fold in the optional chocolate chips, if desired.
  7. Pour the brownie batter into the prepared pan. Spread the batter with a cooking spray coated knife to even out batter, if necessary.
  8. Bake for 45-50 minutes, or until center is just set. Be careful not to overbake. If you prefer firmer brownies, cook for additional time. Allow to cool.
  9. Enjoy your creation!
